Here you will find a traditional tomato and caprese salad or a baby kale salad with fig and date vinaigrette, hearty and spicy bucatini alla amatricana or seafood mezzaluna pasta with shellfish butter and fresh tarragon, a fantastic fillet Piedmontese style or in the Pan-fried orata with caviar and crispy potatoes. This is an Italian restaurant that could change the way you eat.

When you think of classic Las Vegas cuisine, you can’t leave it out Piero’s Italian cuisine (702.369.2305). This old school restaurant near the Las Vegas Convention Center has delighted locals and visitors for generations, and while this is definitely the place to go for all of your favorite Italian dishes like meatballs, pasta fagioli, chicken or eggplant parm and rigatoni with Sunday sauce enjoy, Chef Chris Conlon spices things up with some new twists and fresh flavors worth exploring. Try steamed mussels with white wine, garlic, and Calabrian chilli; Beef Short Rib Pizzaiola with Cipollini onions and peppers; or mushroom risotto with white truffle butter and parmesan. You won’t regret reconnecting with this local eatery icon.

Esther’s kitchen (702.570.7864) has grown to be one of the most popular Italian restaurants in the neighborhood no matter what neighborhood you call your home in, and one of the best reasons to explore the Arts District in downtown Las Vegas. There are things on this menu that are just too popular to be changed, but this creative cuisine continues to push with thoughtful new dishes like rich chicken liver fegatini with balsamic vinegar and strawberry, served with homemade sourdough bread, beef cheek, and red wine pizza with Fontina cheese and mushrooms, ricotta gnudi with pistachio pesto and a dry-aged New York steak with Gorgonzola green and garlic potato gratin. I’m sorry your mouth is watering.

For that great nighttime feeling, hit money (877.230.2742) at the Aria, straight out of New York City with all the flash and style you could want. The table service adds a lot of glamor to this dining experience, but this is a place with substance. The baked mussels, the spicy rigatoni vodka, the veal parmesan and the lobster fra diavolo are legendary. It’s hard to decide which signature to skip to make room for linguine and clams – piccata-style Dover sole, bright and flavorful chicken scarpariello, or the equally memorable cherry pepper ribs. And you can’t go without a piece of tiramisu, cheesecake, or decadent blackout cake. It’s just not an option.
